The PURE GOODNESS Vegetable Stew

This stew will warm up your heart, your body and your soul! Packed with goodness and flavour. It is, and always will be the best winter warmer!

The best thing you can do is make a large quantity as this stew gets tastier the longer it sits! You can also freeze a few portions for the perfect pick me up, quick evening meal!

Ingredients (makes for 6-8)
*All veg to be diced 

  • 1 swede
  • 3 leeks
  • 1 large onion
  • 3 small sweet potato
  • 2 carrots
  • 1 can lentils
  • 1 potato
  • 1 cup bulgar wheat
  • 2 handfuls plum tomatoes
  • 1 can harricot beans 
  • 1 red peppers
  • 2 tspn mixed herbs (feel free to dice up fresh herbs for extra goodness)
  • black cracked pepper
  • 2 pints vegetable stock (2 cubes)

Method

  1. Bring all fresh veg to boil (from cold water) and add stock cubes. Once boiled, reduce to simmer and leave to reduce for 2 hours. 
  2. Add lentils and beans
  3. Using half of the stock from the soup, add the bulgar wheat and the stock to a separate saucepan and bring to the boil - leave to simmer for 20 minutes and until the stock has reduced.
  4. Add the bulgar to the stew.
  5. Serve warm/hot with rice cakes or fresh wholemeal/granary bread free from bad stuff!
